Disney's Copycat Fried Pickles

Most places fry small slices and to me, it just ends up tasting like fried batter with a hint of pickle. The Carnation Cafe uses spears, this combination ends up giving you more pickle to batter ratio.

Ingredients

  • 24 oz jar dill pickle spears
  • 1/4 cup Parmesan freshly grated
  • 2 cups Panko Bread crumbs
  • 1 tbsp Parsley fresh & minced
  • 2 whole Eggs beaten
  • 2 tbsp milk optional
  • canola/ vegetable oil for deep fryer

Instructions

  • Take pickles out of the jar and dry on paper towel
  • In a food processor or blender, blend panko crumbs, cheese and parsley until combined evenly
  • In a small bowl add the eggs & milk and lightly beat.
  • Dip dry pickle spears in the eggs then evenly coat with bread crumb mixture.
  • Set on a baking sheet and rest for 10 minutes
  • Heat oil to 375°.
  • When oil is ready add a couple pickles at a time, do not crowd

Serve with homemade or store bought Ranch dip
