Disney's Copycat Fried Pickles
Most places fry small slices and to me, it just ends up tasting like fried batter with a hint of pickle. The Carnation Cafe uses spears, this combination ends up giving you more pickle to batter ratio.

Servings 4 people
- 24 oz jar dill pickle spears
- 1/4 cup Parmesan freshly grated
- 2 cups Panko Bread crumbs
- 1 tbsp Parsley fresh & minced
- 2 whole Eggs beaten
- 2 tbsp milk optional
- canola/ vegetable oil for deep fryer
Take pickles out of the jar and dry on paper towel
In a food processor or blender, blend panko crumbs, cheese and parsley until combined evenly
In a small bowl add the eggs & milk and lightly beat.
Dip dry pickle spears in the eggs then evenly coat with bread crumb mixture.
Set on a baking sheet and rest for 10 minutes
Heat oil to 375°.
When oil is ready add a couple pickles at a time, do not crowd
Serve with homemade or store bought Ranch dip
