⛵️ Lake Powell Preppin’! ⛵️ For those of you who don’t know, every year my extended family packs up and makes the trek to Lake Powell. We disconnect from the internet and cellular service and enjoy a full 8 days on a houseboat together. Even though it can be incredibly hectic, a lot of work and maybe some family drama thrown it; it’s always one of my favorite trips. My kids get to spend endless hours swimming and hanging with cousins. My parents always spoil us with such an incredible time and we always leave with some hilarious stories.
I’m typically in charge of organizing the food. This year I decided to try to be Uber organized and pre-ordered our groceries and are having them delivered to the boat. 🙏🏼 Hoping it works out! I’ve also smoked some pork shoulder for sliders and made our families favorite curry chicken salad for wraps. I vacuum seal it all so it’s tasty and fresh when we need it.
I cant wait for unplug and enjoy some solid family time!

Today we celebrated this sweet boy turning 4!!! Rhett is my fiercely loyal, determined and stubborn boy! He is so creative and makes you work to earn his love! But when you earn his love, he is the most kind and loving little boy. His snuggles are like no other! Out of nowhere he will come to me and say that he loves me and that I’m the “BEST Mommy in the whole wide world”. He loves to play with friends but also needs his solo time. His creativity knows no bounds. Often, his older brother becomes envious of his ideas and creativity that he tries to make them his own.
Rhett may you always keep that cuddly and loving nature you have as well as your strength and creativity. I cant wait to watch you grow and learn, but please don’t grow up too fast!

You are never too young to start to learn how to cook!

For the #betterwithrealsalt challenge this week I decided to have my kids help me! They love making videos, so we did a little cooking video (in my stories and on tiktok) with them. They #nailedit and the Blueberry 🍋 Lemon Cream French toast 🍞 they made was delicious! I plan to cook one meal with each kid individually every week from now on!

The ingredients for the Challenge were Blueberries, Cream Cheese & eggs! Do an overnight French toast was a #nobrainer! Recipe in the comments! @redmondrealsalt

We got to do a live video cooking class with @chefamandaf and we learned how to make homemade gnocchi... guys it was SO SIMPLE and delicious! Ok so I already did one submission for the @redmondrealsalt cooking challenge this week, but I was having a hard time deciding which idea to do, so I decided to do another! Lol i don’t know if this is breaking the rules... but I’m submitting 2!
Today I made Thai Beef Avocado Egg Rolls with a Spicy Peanut Maple sauce. * 1/2 cup red onion
* 1/2 cup julienned carrots * 1/2 tsp real sea salt
* 1 Tbsp garlic
* 1 lb ground beef
* 1 Tbsp Ginger
* 1 Tbsp soy sauce
* 1/4 cup Sweet Chili Sauce
* 2 Tbsp maple syrup
* 2 cups shredded green cabbage
* 1/4 cup diced red bell pepper
* 1/4 cup cilantro chopped * 1/4 cup basil chopped * 2 avocados sliced * 1 pkg egg roll wrappers * 1/2 cup peanut butter
* 1/4 cup Sweet chili sauce * 1/3 cup maple syrup
* 1/4 cup soy sauce * 1 tsp siracha
* 1 tsp ginger
* 1 tsp garlic

Filling:
Sauté carrots & onions & real sea salt. Add ground beef, ginger, soy sauce & maple syrup. Brown beef, as it’s almost done, add cabbage, red bell pepper & sweet chili sauce. Cook until tender and turn heat off, add cilantro and basil. Allow filling to cool.

Lay egg roll wrapper as a triangle, place filling in center and top with avocado slices. Wet edges, fold up bottom then each side and then the top.

Heat air fryer to 400, grease basket, lay egg rolls in 1 layer not touching and spray with oil. Cook for 6-8 minute and flip. Cook until crispy and golden.
Pour all ingredients for peanut maple sauce in pot and bring to a simmer.
Enjoy!

This weeks cooking challenge with @redmondrealsalt is to put together a dish that includes #groundbeef 🐄 #maplesyrup 🍁 and #avocado 🥑. My mind went instantly to a breakfast bowl. But after I cooked it up, I realized I made an ANYTIME bowl.

Ingredients for the “MBA Bowl”:
Ground Beef 🥩 , Sweet potatoes 🍠 , wilted spinach 🍃 , roasted broccoli 🥦 , 🍁 mapled bacon 🥓 , fried egg🍳 , avocado 🥑 topped with a homemade Maple Vinaigrette!

We are a small family with 2 adults and 3 kids 5 & under. So a big Easter feast just doesn’t make sense for us. So I put together a kid-friendly charcuterie board and I really hope they like it!
My kids are grazers, so this should be right up their ally! I got all the ingredients at my local @harmonsgrocery, somethings were pre-cut, I bought their cheese ball, and then I homemade my copycat LaBou Dill Sauce (NorCal friends will understand) and then I made a green goddess Hummus! @redmondrealsalt is putting on a weekly challenge! At the beginning of the week they list 3 ingredients and you must come up with a recipe utilizing those 3 ingredients and then anything else you have in your pantry! I just love things like this! So, here is my submission!

Grilled Chicken Sweet Potato Sliders
1. I marinaded the chicken in Plain Greek yogurt, pesto, lemon juice, a little splash of sugar and of course #realsalt!
2. I sliced sweet potatoes and sprayed then with avocado oil and sprinkled with Real Salt, roasted in a 450 oven until fork tender, then grilled them.
3. I grilled the marinated chicken until cooked through.
4. My Pesto yogurt sauce is Greek Yogurt, pesto sauce, lemon juice, real salt and a sprinkle of sugar. (Like marinade but more pesto).
5. Assemble your sliders, adding tomatoes and fresh basil! ENJOY!

Egg 🥚 sandwiches 🥪 are some of my favorite things for breakfast. Nothing beats a runny fried egg 🍳 on a fresh sourdough bagel 🥯 !

This bagel sandwich was made with my fresh homemade sourdough bagels, herb goat 🐐 cheese, Fried runny egg, fresh tomatoes 🍅 , fresh basil 🌿 and a drizzle of balsamic glaze. Can someone say #yummy ??!! I just posted my foolproof sourdough bagel recipe on my blog! Trying to push out all my favorite sourdough recipes while everyone is stuck home and wanting to learn new skills! I hope you enjoy!

Also these aren’t complete without @traderjoes everything but the bagel seasoning! But you can always season them the way you prefer!

Happy Saturday!!! Though these days, who really know what day it is? Am I the only one who is constantly confused by which day it is? The past 2 weeks have felt like one giant never ending week!
